PFAS are widely used in industry in over 5,000 molecules for their non-stick, waterproof, stain-resistant, and heat-resistant properties.
They are found in textiles, food packaging, cosmetics, plant protection products, kitchen utensils, varnishes, and many other products.
PFAS possess highly stable carbon-fluorine bonds, resulting in extremely slow degradation and increasing environmental accumulation. The PFOS and PFOA subfamilies are the best known and most persistent perfluorinated substances in the environment.

Regulations
The Stockholm International Convention regulates POPs (persistent organic pollutants) in the European Union with the aim of reducing their use. This convention has banned the use of PFOA since July 4, 2020.
The European Union Water Framework Directive of August 12, 2013, modifies the priority substances in the field of water. This directive identifies PFOS as a priority hazardous substance and sets its limit value in surface water at 0.65 ng/L.
The European Directive of December 16, 2020, concerns the quality of water intended for human consumption. This directive describes the sum of 20 PFAS and sets the environmental quality standard at 100 ng/L.
With regard to food, Regulation (EU) 2022/2388 amending 1881/2006 has incorporated maximum levels of PFAS in eggs, fishery products, and meat. The performance criteria to be met for analysis are laid down in Regulation (EU) 2022/1428.
