Normec Foodcare's Projects Lab: the place for innovative solutions in food safety

From theory to practice

Theoretical models and calculations form the basis of food safety. "Everything is correct on paper, but in practice bacteria can still survive," says Aldo. "That's where we come in. For example, we test with surrogate organisms whether a heating step is actually sufficient. We can also simulate specific conditions in a factory situation; for example, we have mapped that a heated product behaved differently than calculated on paper and was therefore not sufficiently sterilised. Even adjustments that are normally difficult, we perform effortlessly here. "Suppose a customer wants to know what happens if we analyse a product at 37 degrees instead of 30 degrees. In a standard lab this is not possible, but with us it is," Aldo explains.

In a regular laboratory, strict standards apply, but in the Projects Lab, we have the freedom to experiment and conduct in-depth research. As a result, we offer truly innovative solutions.

From issue to practical test design

When a company comes with an issue, Roxanne Stoel starts with an exploratory conversation. "We want to understand exactly what the goal is and where the challenges lie. On this basis, we draw up a plan of action," she explains. This is always done in close cooperation with our team of specialists. "By combining our expertise, we arrive at the best solutions. We then discuss the plan with the client, refine the approach and start the investigation."

Flexibility is one of the Projects Lab's strengths. "Sometimes a recommendation suffices and an extensive test process is not necessary," says Roxanne. "If quick action is required, we can pick it up immediately. We understand better than anyone else how important urgency is for our customers."

Successful case studies

The Projects Lab has already solved numerous complex issues, such as:

  • Validation of cleaning methods: We validated a UV tunnel for disinfecting products at a customer's request.

  • Field tests in shops: We tested in a simulated shop environment how quickly bacteria spread on a cutting machine when employees do not wash their hands.

  • Mould problems in packaging: We investigated mould in packaging despite correct production. We found the cause and validated an appropriate solution.

Validation: an important step in food safety

With stricter requirements of BRC and IFS standards, theoretical underpinning is no longer enough. You also have to test and validate processes in practice.

Aldo confirms this: "It is not enough to just demonstrate theoretically that a process is safe; you also have to substantiate this practically. Our Projects Lab helps companies carry out this crucial validation." Thanks to close cooperation with Normec Foodcare's QA experts, we switch quickly and offer targeted solutions.
